Raw Broccoli Salad
CSA box- Broccoli, Onions
1 bunch broccoli, cut up into small pieces
1/2 cup finely chopped red onions
8 oz. baked smoked tofu, purchased or homemade, cut into small cubes
1/2 cup diced celery ( optional for the Miller kids, I guess)
1 can water chestnuts, chopped
1/2 cup sunflower seeds
Dressing:
1 cup mayonnaise
1/4 tsp stevia or 2 tsp sugar
1 teaspoon apple cider vinegar
Combine dressing ingredients and mix well with everything else.
